Almond and Lemon Buscuits

This is an ideal quick tasty snack for your visitors who come around at a short notice.


  • 1 pkt – Ready rolled light puff pastry
  • 1 egg white
  • zest of 4 lemons
  • flaked almonds
  • 3 tsp caster sugar (optional)


Spread the puff pastry on a floured surface.

Cut into 6 squares. Each square cut diagonally to make 4 small triangles. You should now have 24 small triangles.

Brush each with egg white.

Mix the lemon zest and caster sugar in a bowl. Sprinkle over each triangle. Then top with almond flakes.

Put on a baking tray in a pre-heated oven at 200c for about 15 minutes until golden brown.

Best served warm.
